Mmmm Papaya!

Papaya reminds me of visits to Hawaii to see family and indulge in the amazing sunsets and swimming. Veg-Appeal does it again with this simple, nutritious recipe sure to satisfy on warm summer days.

PAPAYA

This highly loved tropical fruit was reputably called “The Fruit of the Angels” by Christopher Columbus. Papaya is rich in anti-oxidants, the B vitamins, folate and pantothenic acid; and the minerals, potassium and magnesium; and fiber.Together, “these nutrients promote the health of the cardiovascular system and also provide protection against colon cancer.” Papaya has an anti-inflammatory effect, because it contains the enzymes papain and chymopapain, which reduce inflammation and allow improved healing from burns.

Recipe of the Month

Papaya-Avocado Salad

  • 1 medium papaya, diced
  • 1 medium avocado, diced
  • 3/4 cup diced jicama
  • 2 tablespoons chopped toasted walnuts
  • 2 tablespoons low-fat raspberry vinaigrette

Preparation

  1. Toss papaya, avocado, jicama, walnuts and raspberry vinaigrette in a medium bowl.
